Berry Ricotta Smoothies

I love ricotta. Ricotta in ravioli, lasagna, NY thin crust pizza with bloblets of fluffy cheese clouds. Not all recipes call for the entire 15 oz container, so what do you do with leftover? Well, say you go to make a smoothie, find your bananas gone, and your Greek yogurt has gone kaput. Unusual combinations just might crop up. Motherhood is after all, the necessity of invention. These were the surprisingly tasty results:

Strawberry Ricotta Smoothie

Serves: 1 adult and two girlie girls

5 oz frozen strawberries
3 Tablespoons ricotta
¾ cup milk
1 Tablespoon sugar


Blend, top with whip cream, and serve in pink plastic cups with pink straws.

Blueberry Ricotta Smoothie

1 ¼ cup frozen blueberries
3 Tablespoons ricotta
¾ cup milk
1 Tablespoon sugar


Blend. Serve. Sport purple mustaches with pride.

    That looks good…we recently made a tea cake with our abundant blueberries (and cherries). It’s good to know one can make smoothies with ricotta too!
